>I’m trying to find good ice cream recipes since I really don’t want to buy any. It’s really not hard to make and it’s something that is definitly doable with the boys. Well, with the big one. The little one still thinks he needs to eat everything right away. I was looking for a recipe without eggs for quite a while and I finally found one and it’s amazing. I also had a few delicious peaches in the house so I decided to just get it all in there 🙂

Greek yoghurt ice cream

250g greek yoghurt
250ml milk or heavy cream
1/2 – 1 cup sugar
zest of one lemon
juice of one lemon

Caramelized peach puree

4 peaches
1/2 -1 cup of sugar
1 tsp vanilla
water

First cut up the peaches and mix with the sugar and vanilla. Put everything in a pot and add some water, just enough so that all the peach pieces are just in water. You don’t have to cover them in water. Bring to a boil and let simmer until the sugar and water reduced to a nice brown syrup. Strain everything and get all the delicious juices out by squishing it through the strainer with a wooden spoon. This might take a few minutes, but it’s worth it!

For the ice cream mix the greek yoghurt and the sugar until the sugar is dissolved, add the milk/cream, lemon zest and lemon juice. Mix with the peach puree and freeze in a sealable container. For the first 6 hours give it a good stir once an hour to avoid cristallisation.

Serve. Eat. Eat more. Be happy 🙂
