Empanadas

It’s about time for a food post! I can’t believe I haven’t done one in so long. Here we go 🙂

Empanadas

makes 15 medium or 25 small empanadas

3 cups flour

1/4 teaspoon salt

1 1/2 sticks butter, unsalted

1 egg

4-5 tbs ice cold water

filling of your choice

mix the flour and salt and put it in a food processor. Add the butter, egg and iced water until a clumpy dough forms. Cool in the fridge for at least 30min. Make sure you don’t over mix the dough, you want to see little flecks of butter all over. This way it’s gonna be nice and flaky.

Roll out the dough and cut circles. You can fill these with queso blanco and then sprinkle with sugar, queso and guava jam, the left over meat from the day before, add cheese to make it extra yummy. If you can’t get queso blanco you can always use mozzarella. To close the empanadas put some water on the sides with your finger and then seal it with a fork.

Fry in a pot of vegetable oil until golden brown, about 3 min.

  1. Wow! They look and sound delicious. I’d never considered making empanadas, but as you say a great way of using up leftover meat, plus much easier than I thought! Is it possible to bake them instead of fry?

  2. oh, of course you can bake them 🙂 I’d say at 350 until they’re golden brown. But you know, fried stuff tastes so much better…it’s the badness in it 😉

    They’re really easy to make, you should give it a shot! And yes, every leftover you can imagine can go in there. Even sweet stuff, like Nutella 🙂
