Halloween is over and it’s time to taste Christmas. I can do with almost all the crazy decoration, but I can’t do without the taste of it. Every year I get so excited to see Christmas chocolate and cookies in the store and then I just have to give in and get it. Sometimes I go a bit overboard, I have to admit that. This year is no different. I got a huge pack of Spekulatius and after indulging in it like a crazy Christmas-food-starved person, I had to figure out something to do with the leftovers. Pie sounds good. Always.
Apple Blueberry Pie with Spekuliatius Streusel
1 sheet puff pastry
3lbs mixed apples
1/2 cup blueberries
2/3 cup sugar
2 tbsp fresh lemon juice
6 tbsp unsalted butter
1 tbsp all purpose flour
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
10 Spekulatius cookies
1/2 stick unsalted butter
Preheat the oven to 425F for at least 30min.
Spray a 9inch pie dish with non stick cooking spray. Roll out the puff pastry and lay it out in the pie dish.
Peel, core and cut the apples in to small pieces and toss with the sugar and the lemon juice. Heat the butter in a potand add the apples and blueberries and cook for about 10min. Stir in the flour, cinnamon and salt and cook until thick, about 1min. Let it cool.
Meanwhile put the Spekulatius in a Ziploc bag and roll it with a rolling pin until the crumbles are like breadcrumbs. Cut the 1/2 stick butter in small pieces and mix it with the Spekulatius crumbs.
Add the apples in the pie dish and spread the crumbles on top.
Cover the pie with aluminum foil and put it in the oven, on the lowest rack. Immediately turn down the heat to 375F. Bake for 30min and then remove the foil. Bake for another 30min, or until golden brown.
